I also agree with keeping the colors brighter, because that brings about the feeling of liveliness. It will be much more aesthetically appealing with a variety of heights, it also a basis in professional culinary plating. A few differences I noticed are the height at which the leaves are placed. I think the concept art is amazing, and having that replicated in your final product is ideal.
